There are many new fresh flavours with cookies in summer. Yesterday, a lady approach me if I want to add rhubarb for cookie flavor. She hand me a bag for freshly harvested rhubarb.
What a tart cookie would that be?
Or am I expected to pour tons of brown sugar to make it taste better? @chefgreg: any ideas?

@ashnod...Use Rhubabr with oatmeal and maple syrup to hook up the cookie...rhubarb gives it a bit of tart and the oatmeal and syrup balnce it out while giving good texture to cancel rubarb being pasty/gritty
